Agriculture Summer School

This Summer Study Abroad programme is designed for agriculture and animal science students who want to connect classroom knowledge with hands-on field experience in an international setting. Based in Waterford, Ireland, students will earn credits in Principles of Animal Nutrition and Agricultural Animals of the World while engaging directly with farms, agri-businesses, and veterinarians. Outside the classroom, you’ll explore Irish culture through city tours, traditional sports, and excursions to historic and coastal sites. This unique combination of academics and cultural immersion prepares you for advanced study in animal science and careers in agriculture with a global perspective.

The programme is run in partnership with Learn International and South East Technological University (SETU), and is open to students from across the US.

*Airfare, spending money, and passport/visa fees are not included.

PROGRAM DESCRIPTION


Over the course of four weeks, students will study at South East Technological University (SETU) under the guidance of faculty and supported by Learn International’s on-the-ground team. The academic programme combines Principles of Animal Nutrition and Agricultural Animals of the World, with structured field visits, guest lectures, and applied learning activities. You will observe nutrition practices and animal welfare on Irish farms, tour a feed mill and analysis lab, and meet with agricultural cooperatives to understand Ireland’s farm-to-market systems.

Professional development is central to the programme. Students will engage with local food producers, veterinarians, and industry leaders, gaining valuable insights into sustainable agriculture, animal husbandry, and Ireland’s role in the global food system. Comparative sessions allow students to connect Irish practices with US models, highlighting both challenges and opportunities in agriculture worldwide.

Cultural immersion enriches the academic experience. Students will tour Waterford’s Viking Triangle, cycle along the Copper Coast, and visit Kilkenny Castle and the Dunbrody famine ship. Excursions to Dublin and Cork broaden the cultural context, while activities such as a hurling workshop introduce Ireland’s sporting traditions. Optional trips, including to the Rock of Cashel or a national hurling championship, provide even more opportunities to connect with Irish heritage

Earn six US academic credits while gaining hands-on agricultural experience, expanding your global perspective, and preparing for a career in animal science or agriculture.

HOUSING INFORMATION


Students will live in single en-suite rooms in shared residence-style apartments at the SETU student residences. Each apartment includes a kitchen or kitchenette, bathroom, and access to laundry facilities. Housing is located about 10 minutes by bus from campus and 15 minutes from Waterford city centre. Meals are not included, but students will have opportunities to cook their own meals or enjoy Ireland’s local markets and restaurants. The housing experience is designed to provide independence and comfort while offering a strong sense of community.

Principles of Animal Nutrition (3 US Credits)
This course introduces the fundamentals of nutrition in domestic and agricultural animals. Students examine nutrient classification, digestion, absorption, and metabolism, with an emphasis on growth, reproduction, and lactation. Case studies and farm visits highlight the impact of nutrition on animal health, production efficiency, and sustainability.

Agricultural Animals of the World (3 US Credits)
Students survey the diversity of domesticated animals and production systems across global regions, with a focus on Ireland’s agricultural heritage and practices. Students explore cattle, sheep, swine, goats, poultry, and equine management, while engaging with farmers and cooperatives to compare Irish systems with global models.

COURSE TOPICS

  • Farm & Industry Engagement – Visit local dairy, beef, and sheep farms to observe nutrition practices, pasture management, and animal welfare. Tour feed mills and meet agricultural co-ops and food producers.
  • Applied Animal Science Activities – Practise ration formulation, feedstuff evaluation, and comparative breed analysis. Participate in field trips to equine breeding and training facilities.
  • Global Perspectives & Policy – Discuss Irish agricultural policy and EU food systems, and compare Irish and US production models in dialogue with SETU faculty.
  • Guest Lectures & Field Discussions – Attend lectures from agricultural experts and professionals, linking classroom learning to real-world practice.
